Nutrition Educator/Math Teacher
Amanda brings a unique set of talents to Innercept. She graduated from Eastern Washington University with her Bachelor of Arts degree in mathematics education. She is also a graduate of the Institute for Integrative Nutrition as a Health Coach. Amanda is employing both of her educational pursuits in her role here at Innercept. Amanda spent several years in West Africa as a Peace Corps volunteer. During that time, she taught middle school math as well as several other diverse community-based trainings that included teaching healthy ways to eat and cook with minimal resources.
During her stay in West Africa, Amanda found her true passion in nutrition and loves sharing her knowledge about the many ways food choices affect our health and environment. Her time living in an underdeveloped country had a significant impact on her worldview. She carries that vision with her in her everyday life. Amanda is thrilled to be given the opportunity to share a mutual belief with Innercept that “Food is Medicine.”
The Pacific Northwest has been Amanda’s home for many years and when she’s not exchanging recipes with family and friends, she spends as much time as possible in the forest, on the water or atop a mountain.
